Reserve
juice from canned chicken.
Marinate chicken pieces in lime juice in refrigerator for at least 1 hour.
Lightly saute onion, garlic and green pepper in olive oil. Add liquid from chicken,
bay leaf, tomato paste, olives, salt & pepper. Simmer 15-20 minutes. Add tomatoes,
peas, chicken and simmer for another 5 minutes. Note:
Some cumin might be a good addition, too but I didn't have any when I first tried
this. Serve with
Yellow Rice*. |
